Minimum 2 years of experience required

The tasks a Panman is expected to perform include:

Operating steam heated revolving pan to coat items such as candy, nuts and chewing gum tablets with syrup, wax colouring matter or polish

Dumping products into pan and starting revolving of the pan

Pouring specified quantity of syrup over whirling candy or other products slowly, and passing hands through batch to spread syrup uniformly

Managing steam valve to heat pan and heat almonds, nuts or other centres in pan

Examining product to determine adequacy of coating

Applying successive charges of syrup until specified coating thickness is attained

Adding flavouring and colouring ingredients in final coating as specified

Mixing together and applying emulsified or dry ingredients such as gum solution, corn-starch, and powdered sugar to the product

Transferring contents to polishing pans

Setting temperature controls and starting blower to dry the syrup

Ability to handle pan and other related equipment

In-depth knowledge of syrups and other key ingredients used in the process

Ability to measure and pour ingredients over spinning pans

Knowledge of criticality of temperature during the process

Knowledge of different flavours of the candies

Knowledge of latest coating techniques used in confectionery manufacturing

Knowledge of decorating the candies according to the instructions
