The tasks an Ovenman (Bakery Products) is expected to perform include:
Tending the stationary or rotary hearth oven that bakes bread, pastries and other bakery products
Heating the oven to the required temperature
Placing pans of unbaked goods on the blade of a long handled paddle
Opening the oven door and sliding the leaded paddle into the oven
Jerking the paddle from under the pans to deposit them on the hearth
Regulating and controlling the heat and humidity of the oven by observing the gauges, turning the valves or other methods
Checking the colour of the products during baking to ensure uniformity of the finished products
Removing the baked goods from the oven with the paddle and placing them on tiered racks for cooling
Flipping the switch to position the hearth for loading and unloading when tending the rotary hearth oven
Preparing the dough and wrapping papers
Ability to operate a pallet jack and other material handling equipment
Skilled in maintaining a high standard of cleanliness
Skilled in racking the baked product in order to transfer it to the finishing areas
Ability to perform repetitive motions
Knowledge of temperature control methods and requirements
Knowledge of the latest procedures followed in a baking unit
Familiar with the temperature requirements of different goods
